The S-type airlock is one of the most essential pieces of equipment in any home winemaker or brewer's toolkit. Fill the S-bend with a small amount of water or sanitizer solution, insert it into your stopper or bung, and it creates a one-way valve: CO₂ from fermentation bubbles out freely while oxygen and contaminants can't get in. The clear S-shape lets you monitor fermentation activity at a glance — active bubbling means active fermentation, slowing bubbles mean you're nearly done.

Winemaker's Tip: Add a drop of potassium metabisulphite solution to the water in your airlock — if any liquid is accidentally sucked back, it's sanitized rather than plain water.
